Weekly Meal Plan + Week 30

We had an "extra" paycheck this month so I tried to stock up on meat and a few other staples to help us save on our grocery bill in the future. I'm not sure it will last long but it should get us through at least the next month. Why does beef have to be so expensive?!

I kind of went on a cream of soup strike when I started reading ingredients but I have quite a large stock of cream of chicken and cream of mushroom that I need to use up so I took that into consideration when I prepared my meal plan this week. I think I'll make a double batch of the chicken enchilada casserole and freeze it.

TnT are starting Pre-K this year and it recently occurred to me that I probably need to get them some school clothes.

Since I always have to buy everything in two's (they still refuse to dress differently), I have to watch for good sales & bargains. Of course, my favorite places to shop are Target, Gymboree, Crazy 8 and Gap. Thankfully we have a Gymboree and Gap outlet nearby!

Broccoli-Salad + The Perfect Summer Side Dish

I've never been a broccoli fan…actually I've never been a fan of any of the ingredients in this salad (texture issues) except the bacon. Bacon gets me almost every time.

My first experience with this broccoli salad was at a wedding. I helped make a tub (literally, a rubbermaid tub) of it for over 100 guests. I wasn't a big fan of it then but for some reason, this year my taste for it has changed. I recently made it for a cookout and it was the perfect side!

You get the sweetness from the grapes and the dressing, the salty from the bacon and the crunch from the broccoli and onions. Mmm, Mmm, Mmm!

Broccoli-Salad + The Perfect Summer Side Dish

 

Broccoli Salad

Ingredients:

  • 2 cups broccoli flowerets (chopped into bite sized pieces)
  • 2 cups of red grapes, quartered
  • 1/2 cup purple onion, chopped
  • 1/4 lb crisp bacon, crumbled

*Dressing*

  • 1 cup mayonnaise
  • 1/2 cup sugar
  • 2 Tbsp red wine vinegar

Directions:

Mix dressing ingredients until blended and refrigerate until ready to use.

Mix broccoli, grapes, bacon and onion.

Add dressing just before serving.

Weekly Meal Plan + Week 29

I like meat…specifically beef. I remember back in the day when beef was cheap. Now? Not so much (at least not where I live). I tried to go without it but I've missed it so as a compromise instead of buying beef in bulk and separating it into 1 pound portions, I'm going to separate it into 3/4 pound portions. I can get at least one more meal this way.

Once again I put together this week's meal plan by shopping my pantry. My grocery list had about 5 things on it and then the littles decided they needed hot dogs, and cheese crackers and granola bars and, and, and….before I knew it, I had a full page of things to get on my grocery list. Ugh. I've got to figure out a way to decrease the amount of money we spend on snacks.

Weekly Meal Plan + Week 28

I'm playing catch up this week after the last couple weeks of crazy. I don't think I even touched my computer except to print some party stuff for the girls birthday party.

Our pantry is practically bare this week. I had to really dig to come up with a few meals. Thankfully, we had some leftovers from the birthday party that I will be using this week. (we had lots of pizza & salad leftover).

On Sunday, we just needed a break and to get out of the house so we went to Pei Wei. It had been a while since we'd been and the girls loved it (they had the honey seared chicken w/fried rice). Tillie said we needed to eat t here every three days. LOL! She is still talking about it today. Looks like we'll be going back soon.
