Weekly Meal Plan + Weeks 25 &26

Well, I made it 24 weeks without missing a meal plan. Last week was a rough one so the ol' blog was completely neglected.

I am trying to cut our grocery budget down so I started doing the bulk of my shopping at Aldi this week. I was impressed with the savings and so far, I haven't had any of the brands that taste any different from the major brands. Win, win!

I was able to use the smoked chicken JMac made on Sunday for meals through the week. It made for some seriously delicious Chicken BLT's. I may be adding smoked chicken to our menu more often!

For this week's meals, I was able to plan from my freezer/pantry which is nice because it made for extra money for the holiday weekend festivites!

Along with being more thrifty when it comes to grocery shopping, I'm trying to come up with more budget friendly meals. I think I did ok with the last two meal plans but I think I can do better so if you have any meal ideas or recipes that are very inexpensive, please share!

Taco Tuesday Essentials

Tuesday to me will always mean, Tacos!

What can I say, I love Mexican Food. So much so that I have almost all of the kitchen essentials to open a Mexican restaurant. My pantry is always stocked with refried beans, tortillas, corn chips and ingredients for cheese dip. In my fridge you will almost always find sour cream, guacamole and salsa. Oh and cheese! Can't forget about the cheese!

My Favorite tacos lately are shredded beef tacos served on corn tortillas (recipe below).

Shredded-Beef-Tacos

Shredded Beef Tacos

Ingredients:

  • 2lb Beef Roast (I usually get whatever is on sale)
  • 1 yellow onion, sliced or chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions:

Mix together spices in a small bowl. Place roast and onion in the crockpot and sprinkle the seasoning mixture over the the roast and onion. Cook on low for 6-8 hours.

After 6-8 hours (and when the roast is tender) shred the roast with two forks, place back in crockpot and set crockpot to warm (if you have the warm option, if not low is fine).

Meanwhile, set out your toppings (cheese, sour cream, salsa, guacamole, lettuce and tomato in salsa bowls and warm up your corn tortillas in a tortilla warmer. Set the table with taco plates and all the fixins and enjoy your Taco Tuesday!

Freebie Friday + USA Printables

Are you ready for 4th of July? Since my birthday is the 5th and TnT's is the 7th, it always seems to sneak up on me because I'm usually party planning for their party.

I did manage to come up with a couple of fun printables and an awesome print (yes, I'm biased).

USA-Banner-&-Flags

If you want to add a little pizazz to your banner, spruce it up by matting the flags on red cardstock, adding ribbon or tissue tassels. Here I just added red and silver tissue tassels.

For the flags you can make actual flags to use as cupcake topper or just little flags to decorate by folding them in half around a wooden skewer or a sucker stick. You can also use them to make a mini banner like I did here.

Sweet Summer Time

Sweet Summer. I just love Summer. Why does it seem to always end so quickly?

Last weekend was a good weekend. On Friday, we went to our very first concert in the park with my sister and her family. It was so much fun! The park has their stage situated not far from the playgrounds so we found a spot that was perfect to be able to keep our eyes on the kids while also enjoying the concert. It was a win win for everyone! The band playing that night did covers for some classic oldies….like Take it Easy, Brown-eyed Girl, Brick House, and Sweet Emotion. They were really good!

Saturday we basically spent the day outside and the girls dug in the dirt, played in their pool and chased fireflies when it got dark.

I tried to get a picture of the lightning bugs as they lit up but it just wasn't happening. The girls did great and caught a lot of them with their bug nets. We, of course, released them before heading inside.

Sunday was spent doing much of the same. JMac put a coat of stain on the girls playset while the girls dug, swam and chased fireflies. I'm pretty sure they would live outside if they could. Oh, we also ate popsicles and discovered a new friend on our patio.

I have a feeling our weekends will consist of pretty much the same as last weekend. I do have a couple of special outings planned for sometime this summer though. I want to soak up as much of this weather as I can because it will be over before we know it and the girls will be in school and I'll be complaining about how cold it is.

I don't know about you but I love all the red white and blue clothes I've seen when I go shopping lately. It takes every thing in me to not buy one of every thing for my girls.

Weekly Meal Plan + Week 23

Y'all, I'm really starting to hate buying groceries. I mean, it sometimes seems like it is actually cheaper to eat out! Anyway, I get all excited when I get my meal plan grocery list together. I've printed my coupons and matched up the sales and checked all my shopping apps for more discounts and then I go shopping with all the confidence that I'm getting out of the store saving a ton. Then, I get to the register and the cashier tells me the total….that is over what I've budgeted for groceries. Ugh!

So then I go home, unload my groceries with a little bit of shoppers' guilt (which is ridiculous because it's not like I'm buying things we don't consume) and then I sit down at my computer and have to tweak my budget (totally defeats the purpose of a budget, huh?).

But it's ok, it's a learning process, right? ::rolls eyes::

I have a new plan for grocery shopping. I'm determined to stay in the budget I initially set so stay tuned.

Ok, so let's move on to this week's meal plan. It's not that exciting. I literally didn't have to buy a thing for this week's dinners (pretty sure all our grocery money went toward breakfasts and snacks for constantly hungry almost 4 year olds).

Summer Treats

The girls had their very first snowcone yesterday. I had no idea what flavor to get them and there was no way I was going to read all the flavors available. Thankfully, my niece and nephew were with us and suggested 'Rainbow' so that's what the girls got.

I'm still very bummed that we lost our pool in the tornado. I still hope to replace it one day but I'm not getting my hopes up. JMac hated taking care of the one we had. Anyway, we set up the pool we bought for the girls. I think it'll do just fine for now.

If anything positive came out of last month (the month of hellish weather), it's that I lost 7 pounds. Nothing like a little momentum to get you going. I'm once again counting calories, trying to get my steps in and working out at least 3 times a week. I ran jogged 3/4 of a mile yesterday for the first time ever! Maybe running jogging will be my new thing? I want to lose another 5 pounds.

I need some shoe recommendations so if you have any, let me have 'em! I need something for running and normal workouts so maybe a cross training shoe? Also, I need something super affordable.

It's JUNE!

Good riddance to the month of May. I am so glad it's now June! I don't think I could have taken any more severe thunderstorm, flash flood or tornado warnings.

It all started on May 6th when we spent 6 hours in our storm shelter. Before that, I had spent maybe 2 hours TOTAL down there in the 15 years we've had the storm shelter!

Below is a graphic of the number of warnings we had for the month of May ONLY. Also, this was just for the area that the US National Weather Service in Norman covers. This was also as of May 28th. There were more warnings the last 3 days of the month.

The total number of tornado warnings for the entire state as of May 28th was 169. Our normal average for an entire year I think is around 55-60!

The weather this year has been cray-cray and my anxiety levels have been 100 times higher than normal.


Our year-to-date rainfall as of May 31 is 28.7" and of that we got 19.5" in May.

But now? THE SUN IS OUT and there's no chance of rain in the near future! I cannot tell you how excited I am about that.

I feel like I can finally breathe again!

We've already been spending a lot of time outside.

The mosquitos, however, are ridiculous. No more mosquitos just at dusk. They are gigantic and they are out all day long. We have been building our arsenal to keep from getting eaten alive by them and sadly, the girls already have bites all over them.

JMac and I have started back at planning our landscape. Our backyard needs to be scraped to level it out. Between the tornado slamming things into the ground, construction and gophers, our yard has lots of holes and low spots. Not to mention the sink holes created from all the rain we received last month. We also have a shed that needs to be turned into a playhouse, sectional couches that need to be built, a table for our barn patio, and a buffet cabinet that needs to be painted for the patio.

Maybe I'll even get to plant my flowers IN our flower beds now.
