Now that it's Summer I plan to have even more simple meals. There will be lots of grilling.

When it comes to meat, I have always leaned more toward beef than chicken. Beef recipes just seemed easier than chicken recipes and chicken, for me, just didn't have enough flavor.

Now that chicken is far less expensive than beef, I am constantly on the lookout for easy and delicious chicken recipes.

Here are 5 of my most favorite (tried and true….even my kids like them)chicken recipes:

This Barnyard Party is a perfect theme for this time of year. A perfect theme for an outdoor party. There are so many things you can do with a barnyard/farm theme. Using burlap and twine, cow print and red accents you could pretty much imitate a barn like setting for your party.

Wednesday Randoms

This week's randoms are all weather related because well, that's pretty much the only thing that has been happening around here.

One

I'm sure I've made this pretty obvious but I am not a fan of Spring. I've never really been a fan but after the last few years, Spring comes in last on my list of favorite Seasons.  More specifically, I do not like the month of May. May is typically our tornado season so you can see why I don't like it.

Mother's Day was good. We were supposed to have more storms but they ended up forming a little bit east of us. The girls got me a couple of Hydrangea bushes that I've been wanting to plant in front of our porch. Now if it will just stop raining long enough to plant them.

Since I'm ready for Spring, I've been making a list of summer activities. I cant. wait. for it to get hot outside. Bring on the 90+ degree days! Anyway, since I haven't been able to convince JMac to replace our pool, I have compromised and agreed to get this one for the girls.

The girls have done pretty well considering we've been trapped inside because of the rain and storms. We did get a nice little break with pretty weather on Monday and Tuesday. We took advantage and got out for a little bit to do some grocery shopping and get some retail therapy. I'm hoping we get some more sunshine soon!

Whew! The past few days have been rough with bad storms. Because of this busy storm season and my lack of desire to make big meals lately, I'm planning super easy & quick meals that don't require me to be in the kitchen very much.

Wednesday Randoms

If you had Mexican food in honor of Cinco De Mayo last night, raise your hand. (raises hand) I made the Damn Delicious White Chicken Enchiladas and the Quick Spanish Rice that I posted yesterday. It was all delicious!

 

Three

We are on day two of a 6 day forecast of rain. They're even forecasting that we will get between 7-10 inches of rain this month. Ugh! Yesterday I took the girls outside to run off some energy before it started raining. We were out for about an hour before it started. I fear cabin fever will set in soon with the girls. I'm going to have to get creative with activities.

I've been using My Fitness Pal again to track my calories and my steps. I've struggled to get to the 10,000 step goal until this past weekend when we worked in our barn trying to get it organized. I went over 17,000 steps! Now I'm motivated and do everything I can to meet that 10,000 step goal. I'm trying to save up for a Fitbit Charge + HR. Anyone have it? Do you like or dislike?

I've been busy with the shop. Designing lots of party suites. So far I've done some add-ons for the Newsboy theme, Pancakes & Pajamas and Minecraft Creeper party themes.  I love custom design projects so if you have a party coming up, email me so I can get you on my calendar!

The Best Sweet & Spicy Pizza Sauce




The Best Pizza Sauce | Just Wait til You have Kids

We are a pizza loving family. If you follow my Weekly Meal Plans, you may have noticed that pizza is consistently on our meal plan every week.

It wasn't until recently that I started making homemade pizza….from scratch. Yep, I make the dough, the pizza sauce and even the sausage toppings from scratch. Did you know making your own sausage is SO easy to make and takes no time at all. That's another recipe for another day though.

This pizza sauce is the best I've ever had. If you like a sweet sauce then you will like this recipe. If you like your sauce a little spicy well then this recipe is for you too! It's the best of both worlds. I like this pizza sauce so much that I even use the seasoning mixture in my spaghetti sauce! It's that good.

The Best Pizza Sauce | Just Wait til You have Kids

The Best Sweet & Spicy Pizza Sauce

Ingredients:

  • 1 6oz can tomato paste
  • 1 6oz can water
  • 3 Tbsp grated parmesan cheese
  • 1 tsp minced garlic
  • 2 Tbsp honey
  • 3/4 tsp onion powder
  • 1/4 tsp oregano
  • 1/4 tsp marjoram
  • 1/4 tsp basil
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper (optional)
  • 1/8 tsp red pepper flakes (optional)

Directions:

Dump all ingredients in a bowl and stir. Cover and put in fridge for about 20 minutes (the longer it sits the better the flavor.
